I found a new obsession, Jordan and I just can’t stop eating sandwiches!
Betsy Opyt has gone from being Miss Indiana 2000 to a registered dietician who, like many of our listeners, is tired of boring health foods that are more noted for what is not in them than what is. Fortunately, she took the initiative to start her own food company- Betsy’s Best- which offers an amazing line of Non-GMO nut butters that range in flavor from an almond butter with cinnamon to cashew and peanut varieties with cardamon and chia to a new toasted coconut cashew butter that is amazing by the spoonful or even on ice cream!
The pics on her website of award-winning seed butter and jelly sandwiches (SB&J) only prove that I m not alone in my obsession. Fortunately, I have a registered dietician to help me through!
